Insieme alle scalille ed alle chinulille sono dolci tipici natalizi, che dopo essere stati impastati, vengono incavati e rigati su un crivello di vimini o canna. Vengono fritti e poi passati nel miele che conferisce loro una particolare dolcezza. Se ne prepara un grosso quantitativo perché è tradizione regalarne un vassoio a parenti ed amici ed anche perché vengono continuamente consumati durante le pause nelle serate di giochi di società del periodo natalizio insieme ad un Greco di Bianco DOC.
Ingredienti per 6 persone:
800 gr. di farina per dolci, 150 gr. di latte intero, 150 di zucchero, 4 uova intere, una bustina lievito per dolci, la buccia di un’arancia grattugiata, 500 gr. di miele di castagno, 150 gr. di olio
Preparazione
Disponete la farina a fontana
su una spianatoia, incorporatevi lo zucchero, l’olio, il latte, la bustina di lievito e la buccia d’arancia grattugiata. Lavorate per circa 15 minuti il composto sino a renderlo morbido ed omogeneo.
Lasciate riposare l’impasto per dieci minuti ed iniziate la lavo razione. Formate con l’impasto dei cordoni poi tagliateli a pezzetti e fateli passare su un setaccio di vimini spingendo con le dita, per dare la tipica forma. Friggete in abbondante olio alla temperatura di 170°/180° C. Lasciate raffreddare e passate in padella con del miele caldo fuso.

This sweet, together with scalille and chinulille, are a typical Christmas sweet. They are kneeded, hollowed out and then pressed against a wicker basket to take the pattern. They are then fried and dipped in honey to give them their particular sweetness. They are prepared in large quantities because traditionally a tray of the sweets is given as a gift to family and friends and also because they are continually eaten, together with a white liqueur wine, during pauses in the game playing during Christmas evenings. Serve with Greco DOC wine from Bianco.
Ingredients for 6 people
800g flour for baking, 150g full fat milk, 1 50g sugar, 4 whole eggs, 1 small bag of baking yeast, 1 grated orange peel, 500g chestnut honey, 150g oil.
Method
On a work surface make the flour into a fountain shape with a ho/e in the centre; add sugar, oil, milk, yeast and grated orange peel. Kneed for around 15 mins until a soft dough is formed. Leave to rest for 10 mins and start to kneed again. Make long, thick strips with the dough, cut into medium sized pieces and then press each one onto a wicker basket to give the typical pattern. Fry in a large pan of oil at between 170°/180°. Leave to cool and dip in a pan of hot melted honey.
