Il fico dottato di Cosenza è il migliore per fare dolcetti golosi. Le crocette sono 4 fichi semplicemente essiccati e incrociati farciti con la mandorla. Molto rinomati sono anche “i palloni di fichi “, ovvero foglie farcite con pezzetti di frutti secchi, tracce tradizionali di frutti infilati nelle stecche di canna. Si abbinano bene ad un Locride passito IGT.

Ingredienti:
fichi secchi, mandorle spellate e tostate o gherigli di noce o scorza di agrumi secchi.
Preparazione:
Dividete manualmente un fico a metà, dall’ostiolo fino al peduncolo, lasciando le parti aperte unite per il peduncolo. Riempite l’interno di ciascun lobo con una mandorla o con mezzo gheriglio di noce, ed eventualmente con della scorza di agrumi (arance, limoni e cedri). Quindi sovrapponete al fico farcito l’altra metà e pressate con le dita. Lavorate altri due fichi come i precedenti sovrapponeteli ortogonalmente ai primi due formando così una croce greca. Sottoponete ad ulteriore pressione meccanica fino a 24 ore le crocette, quindi adagiatele sopra una teglia e infornate a 150/200° fino a quando non assumono una colorazione dorata. Spennellate le crocette fredde con una soluzione di acqua e mielata di fichi, spolverate di zucchero con foglie di alloro.

Method
