Sono dolci tipici del periodo pasquale. Si usa servirli con il the o con un buon passito presentandoli in un piatto di coccio, guarnito con delle piccole uova di cioccolato e un ramoscello d’ulivo.
Ingredienti:
1 kg. di farina, 300 gr. di zucchero, 5 uova, 10 uova sode da intrecciare ai cuculi, 40 gr. di lievito di birra, i ci di latte, 150 gr. di strutto
Preparazione
Sciogliete il lievito nel latte tiepido, aggiungete le uova, lo zucchero, lo strutto e sbattete il tutto con una frusta fin che tutti gli ingredienti risultino ben amalgamati. Aggiungete la farina e formate una pasta liscia che lascerete lievitare, coperta con uno strofinaccio in un luogo tiepido, per circa un’ora. Formate dei cordoni di pasta e passateli intorno ad un uovo in modo da dare al cuculo la caratteristica forma di un neonato in fasce. Disponete in una teglia lievemente unta e lasciate lievitare per circa due ore, spennellate con un po’ di latte ed infornate( a 180°) per circa 30 minuti.

Cuculi are typical Easter sweets. They are normally served with tea or a good Passito wine and presented on an earthenware plate, garnished with small chocolate eggs and olive branches.
Ingredients
1 kg flour, 300g sugar, 5 eggs, 10 eggs to be platted into the sweet, 40g beer yeast, 100 cc milk, 150g lard.
Method
Melt the yeast in warm milk, add eggs, sugar, lard, and beat together with a whisk until all the ingredients are amalgamated. Add flour and form a smooth dough and leave to rise, covering with a tea towel, in a warm area for an hour. Make the pasta into long thick strips and wrap them around the egg forming the characteristic shape. Put them on a baking tray and brush with oil. Leave to rise for around 2 hours, brush with milk and put in a hot oven (180°) for around 30 mins.
